My vegetable soup - Nigella/Jamie, watch out! :D

So I was looking up some recipes today as I wanted to use up some kale. Initially thinking of potato and kale soup, but then changed my mind and opted for a simple 'what have I got in the fridge/cupboard?' sort of soup. Made my own version and if I may, I found it quite tasty and want to record my recipe somewhere...

In 1 pan, I prepared 50g of red lentils. 1 part dried red lentils to 5 parts boiling water. I washed/rinsed the lentils in cold water first, then added the 5 parts boiled water into the pan and brought it to the boil for 7-10 minutes. Letting it simmer for 30 minutes.

In the meantime...

6 potatoes, peeled and chopped
2 carrots, peeled and chopped
1 parsnip, peeled and chopped
1 big handful of kale, roughly chopped
2 cloves of garlic, peeled and chopped
chicken stock
about 6 sprigs of fresh thyme (without stems)
approx. 1 tablespoon of dried basil
approx. 1 tablespoon of dried rosemary

All in a large saucepan. Brought it to the boil, added the lentils and then simmered for approx. 20 minutes until the vegetables were soft.

I added a pinch of salt (couldn't find the pepper, would've added...)

Then blended in the blender and VOILA! Simples! Really hearty and tasty with some crusty bread.
